If you like bechamel sauce and chicken, imagine it with mixed vegetables. The color looks appetizing and the taste is irresistible! Here is the baked chicken and vegetables recipe that’s worth trying at home.

Ingredients;

  • 500 grams chicken breast,
  • 1 onion, chopped finely,
  • 2 green peppers, chopped finely,
  • 1 red bell pepper, chopped finely,
  • 1 canned mixed vegetables (560 grams),
  • 2 tablespoons of vegetable oil,
  • Black pepper,
  • Red pepper flakes,
  • Thyme,
  • Salt.

For the bechamel sauce;

  • 400 ml. milk (2 cups),
  • 2 tablespoons of butter(50 grams),
  • 2 tablespoons of all purpose flour,
  • Black pepper,
  • 1 teaspoon salt.

For the top;

  • Grated cottage cheese.

Process of Baked Chicken and Vegetables with Bechamel Sauce Recipe

Firstly, wash the chicken breast and cut the breast in bite size.
Put the vegetable oil in a non sticky pan and add the chopped chicken breast.
Cook by stirring frequently until the chopped chicken breast absorbs its juice again.
Then add chopped onion, peppers and cook by stirring.
Add the rinsed and drained mixed vegetables and salt, spices and stir.
Cook for 1 or 2 minutes and remove it from the stove.

To prepare the bechamel sauce, melt the butter in a small pot.
Add the flour and stir until bubbly. Don’t let the flour darken or burn.
Turn the heat to low, add the milk, salt, black pepper and whisk until smooth.
And continue whisking until the mixture scalds and begins to thicken.
Don’t let it boil. Continue until you have a smooth, white sauce.

Pour the chicken breast pieces and vegetables mixture in a large square pyrex.
Pour the bechamel sauce on the mixture.
Then sprinkle some grated cottage cheese.
Bake the chicken and vegetables with bechamel sauce in the preheated oven at 170°C until it gets golden brown.
After baking, serve it by slicing when it gets warm.

In this baked chicken and vegetables recipe, the canned mixed vegetables is used but if you want you can prepare the vegetables yourself.
Boil diced 2 potatoes and diced 2 carrots until they get tender and drain.
Boil also 1 teacup peas and drain and add them in to the dish.
