Baked Hodge Podge Recipe
This is delicious anytime, but best in early summer when all the veggies are fresh from the garden! Serve Hodge Podge with a nice salad and some crusty bread.
- 400 grams beef (chopped in bite size),
- 2 eggplants,
- 2 tomatoes,
- 2 potatoes,
- 2 green pepper,
- 2 cloves of garlic,
- 1 coffee spoon tomato paste,
- 1 coffee spoon pepper paste,
- 2 tablespoon of vegetable oil,
- 1 teacup of water,
Process of Baked Hodge Podge Recipe
At first, peel and dice the eggplants, tomatoes and potatoes.
Chop the green peppers and garlic.
Put all the vegetables in a deep bowl and mix.
Add the pastes, vegetable oil, salt and spices on them and mix well.
Then add the chopped beef and one tea cup of water and mix them.
Place them in the oven bag and then into a baking tray. Close the bag securely with tie.
Cut six 1/2 inch (1 cm) slits in the top of the bag so that steam can escape.
Bake them into the preheated oven to 190°C for 1 hour and serve it hot.
