Baked Meatballs and Potatoes Recipe
This easy baked meatballs and potatoes recipe is the perfect solution for Sunday lunch.
- 4 large potatoes,
- 4-5 green pepper,
- 1 tomato,
- 1 red bell pepper.
For the meatballs;
- 300 grams ground beef,
- 1 onion (grated),
- 1 egg,
- 1/2 cup of breadcrumbs or 3 slices of stale white bread, crusts removed,
- 1 bunch of parsley (chopped),
- 2 gloves of garlic (grated),
- 1 coffee spoon of pepper paste,
- Black pepper,
- Red pepper flakes,
For the sauce;
- 1 tablespoon of tomato paste,
- 1,5 cup of water,
- 2 tablespoons of vegetable oil,
- Vegetable oil.
Process of Baked Meatballs and Potatoes Recipe
For the meatballs, mix all the ingredients in a deep bowl by hand.
Knead the mixture together for several minutes until it’s well combined.
Take walnut-sized pieces from the mixture and make oblong meatballs by rolling them between the palms of your hands.
Set them aside to let them rest for a few minutes.
Put little oil in a large skillet and heat on high.
Peel the potatoes and cut them in wedges. Fry them until they soften and turn a light golden brown.
Clean the green peppers and cut them into four pieces and fry them.
And then fry the meatballs until they are nicely browned on all sides.
In a large baking pyrex, arrange the meatballs and potatoes to cover the entire bottom of the pyrex.
Next, arrange the fried green peppers over them. Cut the tomato into wedges and chop the red bell pepper and arrange them along with the red peppers.
For the sauce, mix all the ingredients in a bowl and pour the mixture over the pyrex.
Bake it in the preheated oven to 180°C until the tomatoes and peppers are softened and slightly browned.
Remove it from the oven and serve hot.
