Baked Vegetable Kebab with Ground Beef Recipe
This is a southeastern Turkish style kebab, prepared at homes. A tradition in southeastern is to prepare the baked vegetable kebab with ground beef at home and take the tray to the local bakery to be baked in the wood fired oven, providing amazing, melt-in-the mouth flavors.
- 3 eggplants,
- 4 potatoes,
- 5-6 green peppers.
For the filling;
- 250 grams ground beef,
- 2 green peppers,
- 2 onions,
- 1 tomato,
- Crushed red pepper,
- Black pepper,
- 3-4 tablespoons of vegetable oil.
For the top;
- 1 coffee spoon of tomato paste,
- 1 tea cup of water,
- Tomato slices.
Process of Baked Vegetable Kebab with Ground Beef Recipe
Firstly prepare the filling of baked vegetable kebab with ground beef.
Chop the peppers and the onions and add the vegetable oil into a saucepan.
Add the peppers and the onions. Cook them by stirring.
Then add the ground beef and cook.
After the ground beef absorbs the juice, add the peeled and chopped tomatoes and saute them.
At the end, add salt, crushed red pepper and black pepper and stir.
Turn off the stove.
Wash the eggplants and peel the eggplants in stripes then make lenghtwise slices.
Wash the peppers and also make lengthwise slices, take out their cores then cut them in half.
Heat the oil and put the vegetables into it and take them into a serving plate.
Place the vegetables into a large round pyrex (30 x 30 cm.). Leave the middle of the pyrex empty.
Put the filling in the middle of the pyrex among the vegetables. Place the tomato slices on it.
Finally mix the paste and the water in a bowl and pour it into the pyrex.
Bake the baked vegetable kebab with ground beef into the preheated oven to 200°C for 20 or 25 minutes.
After baking, serve the dish hot.
