Baklava with Homemade Phyllo Dough Recipe

Another variant of baklava, this time by its shape. A few layers of very thin phyllo dough are placed on top of each other, dressed with nuts between the layers, wrapped around a rolling-pin, and creased around the pin by pushing. It is then dressed with butter, oven baked and sweetened with the syrup. Here is the baklava with homemade phyllo dough recipe.

For the dough;

  • 2 eggs,
  • 1 teacup of vegetable oil (110 ml.),
  • 1 tablespoon of vinegar
  • 2 tablespoons of yogurt,
  • A flick of salt,
  • 1 coffee spoon of baking powder (full spoon),
  • 3 cups and 1 tablespoon of all purpose flour (the cup is: 200 ml.).

To sprinkle between the dough sheets;

  • Starch.

For the filling;

  • 1 cup of crushed walnut,
  • 1 tablespoon of granulated sugar.

For the top;

  • 150 grams butter or margarine,
  • A half cup of vegetable oil (100 ml.).

For the syrup;

  • 3 1/2 cups of granulated sugar,
  • 3 1/2 cups of water,
  • 3-4 drops lemon juice.

The cup size is 200 ml.

Process of Baklava with Homemade Phyllo Dough Recipe

Firstly, prepare the dough. Combine the eggs, yogurt, vegetable oil, vinegar and salt in a deep bowl. Add the baking powder and add the flour slowly and knead well. Get a soft but not sticky dough.

Divide the dough in 6 pieces and divide each pieces in 5 pieces and roll them in your palm. Place these dough pieces in a slightly floured tray and cover them with a slightly wet cloth. And leave them covered for 30 minutes.

For the filling, mix the crushed walnut and a tablespoon of granulated sugar in a bowl.

At the end of the time, roll out the dough pieces as big as tea saucer. Sprinkle some starch on them and put on top of each other. Get 6 5-tiered dough.

Sprinkle starch and roll the 5 tiered dough as thin as possible by using rolling pin. Put the thin rolling pin parallel to the edge of the phyllo sheet and roll. Then, from the two ends of the rolled sheet press with your two hands towards the middle until it shrinks.

Lift the roll with the aid of the thin rolling pin and place it on a baking sheet by laying the dough sheet again. Sprinkle the walnut and the sugar mixture on the dough sheet and again roll the dough with the help of the baking sheet. Cut the long dough piece in 3 cm. thickness and place them in a tray. Continue with the other 5 tiered dough pieces.

For the top, melt the butter or the margarine and then add the vegetable oil and mix. Brush the mixture on the desserts before baking.

Then bake them in the preheated oven at 190°C until they get golden. After baking, leave the desserts to cool at the room temperature.

Prepare the Syrup

Mix the water and the sugar in a pot until the sugar dissolves and leave it to boil. After it starts to boil, continue to boil for more 10 minutes over low heat and add the lemon juice and mix by stirring. Then remove the syrup from the stove and leave it to get warm.

After the baklava with homemade phyllo dough get cool enough, pour the warm syrup on them. After the desserts absorb the syrup and get cool enough, serve.

Note: You can bake the baklava with homemade phyllo dough the day before and pour the syrup the following day.
