Braised Zucchini Recipe
Take a break from the usual leafy green salads, and dig into a plateful of succulent zucchini instead? It’s a beautiful vegetable and here’s a recipe. This easy braised zucchini recipe makes a fantastic and also healthy side dish.
- 3 small zucchini,
- 1 onion,
- 1 red bell pepper,
- 3 tablespoons of vegetable oil,
- A half tablespoon of paste,
- 1 coffee spoon of red pepper flakes,
- A half teaspoon of black pepper,
- 1 teaspoon of dried mint,
- 1 pinch of parsley,
- A half cup of water (or consomme).
Process of Braised Zucchini Recipe
Firstly, wash the zucchini and cut them in small pieces (do not peel them).
Chop the onions and put them in a pot and add the vegetable oil and cook by stirring.
Then add the chopped red bell pepper and continue to cook by stirring for 1 or 2 minutes.
Add the paste and stir and finally add the zucchini pieces and stir.
Then cover the lid and cook by stirring frequently for almost 5 minutes.
After the 5 minutes, add the salt and the spices and pour the water and stir.
Then cover the lid and continue to cook over low heat until the zucchini get tender and absorb the water.
At the end, add the chopped parsley on the dish and stir.
Turn off the stove and leave it for a while and serve.
This braised zucchini recipe is for 3 or 4 people.
