Bulgur Wheat Salad Recipe
This delicious, healthy bulgur wheat salad is perfect as a summery lunch or side dish for your main course.
To cook the bulgur;
- 1 cup of large (coarse) bulgur wheat,
- 2 cups of water (400 ml.),
- 3 – 4 tablespoons of vegetable oil,
- 1 coffee spoon of tomato paste,
For the salad;
- 5 leaves of lettuce,
- 5-6 brunches of parsley,
- 5-6 brunches of dill,
- 1 brunch of green onion,
- 5 or 6 Broccoli florets,
- 4-5 gherkin pickle (I prefer bean pickle),
- A quarter lemon juice,
- 1 palm of pickled pomegranate.
Process of Bulgur Wheat Salad Recipe
Firstly, wash or rinse bulgur well.
Heat the vegetable oil in a pan and add paste.
Add the rinsed bulgur and cook by stirring for 1 minute.
Add the water and the salt then cook it until it starts to boil.
When it starts to boil,continue to cook it over low heat until the bulgur get tender.
After they get tender enough,mix by stirring and remove it from the stove and leave it to cool.
Wash the ingredients you need for the salad and cut them in small pieces and put them in a deep salad bowl.
Add the florets of broccoli and diced pickled gherkins in the bowl.
Finally add the cooled bulgur and lemon juice and mix well by stirring.
Place the salad in a serving plate and decorate the salad with pickled pomegranate.
Do not add extra oil in the salad because ,some oil is used while cooking the bulgur.
This bulgur wheat salad recipe is for 4 or 5 people.
