Process of Buttery Flaky Pastry Recipe
Firstly, to prepare the flaky pastry dough, combine the warm water, warm milk, sugar and yeast in a deep bowl.
Melt the butter and pour the vegetable oil (make the butter warm) in a pan and pour the mixture in the bowl.
Add the vegetable oil, yogurt, egg whites and salt.
Then add the flour slowly and knead.
Get a soft but not sticky dough (the amount of the flour can change so add the flour slowly cup by cup).
Cover the dough and leave it for 30 minutes.
While the dough is resting, prepare the filling.
Melt the butter add the flour and cook by stirring (do not let the dough get brown).
Then add the salt and mix.
Then leave it to cool.
The mixture should be smooth because it will be brushed on the phyllo sheets.
Make the dough in 8 or 9 pieces and roll them in your palm.
Place them in a tray, cover the tray with plastic wrap and leave them for 15 minutes.
Roll out the first dough piece on a plain lightly floured surface by using a rolling pin as big as a phyllo sheet.
Then brush the mixture on it and sprinkle the flour – butter mixture.
Then wrap and roll the dough.
After that make the rolled dough spiral and tuck the end underneath and place it into a greased tray.
Continue with the rest of the dough.
Press on the spiral shaped dough lightly by using your palm and brush the egg yolk on it.
Bake the buttery flaky pastries in the preheated oven at 180°C until they get golden brown.
When they get warm, serve.
And if you want, you can put them into freezer bags and save them in the freezer.
