This carrot cake with whipped cream frosting that might just become your favorite. This carrot cake is delicious and moist. And also whipped cream frosting is one of the lightest cake icings you can make.

Ingredients;

For the carrot cake;

  • 3 eggs,
  • 1 1/2 teacups of granulated sugar,
  • 110 ml. milk (1 teacup),
  • 1 teacup of vegetable oil (110 ml.),
  • 1 cup and a full tablespoon of all purpose flour,
  • 2 packets of baking powder (10+10 grams),
  • 1 teaspoon of cinnamon powder,
  • 5 grams vanilla (1 packet),
  • 1 cup of grated carrot,
  • 1 palm of crushed walnut.

For the cream;

  • 3 cups of milk (600 ml.),
  • 2 full tablespoons of all purpose flour,
  • 1 full tablespoon of starch,
  • 1 teacup of granulated sugar,
  • 5 grams vanilla (1 packet),
  • 1 tablespoon of margarine.

For the frosting;

  • 1 packet of whipped cream powder (75 grams),
  • 1 cup of milk (200 ml.).

Process of Carrot Cake with Whipped Cream Frosting Recipe

Make the cake. Sift the flour, baking powder, vanilla and the cinnamon powder in a medium bowl.

Mix the eggs and the sugar in a large bowl for 1 or 2 minutes. Add the milk, vegetable oil and the grated carrot and mix. Add the flour, vanilla, baking powder, cinnamon mixture and the crushed walnut and mix well.

Pour the cake batter on a baking sheet in a tray and spread. Bake it in the preheated oven at 180°C until it gets golden.

Make the cream. Mix the milk, sugar, flour and the starch in a pot. Cook it by stirring constantly until it gets thick.
Then add the vanilla and the margarine and stir. Remove it from the stove and leave it to cool.

Make the frosting. Mix the whipped cream powder and the milk for 3 or 4 minutes until it gets thick and then leave it in the refrigerator.

Frost the cake. Cut the roasted edges of the cake and divide the cake in 3 pieces. Place one of the cake layers into the serving plate. Spread 1 cup of the cream over the cake. Place a second cake layer on top and press lightly to adhere. Spread another 1 cup cream over the second cake layer. Top with the final cake layer, pressing lightly to adhere. Cover the cake with the cream left and then use the frosting to frost the top and sides of the cake.

You can use grated coconut or grated chocolate to decorate the cake. Then leave the cake in the refrigerator for 1 or 2 hours and serve.
