Carrot Cookies Recipe
These soft and chewy carrot cookies are flavorful and tasty. They are a perfect treat for afternoon tea time.
For the dough;
- 200 grams margarine (at the room temperature),
- 1 cup of powdered sugar,
- A half cup of yogurt,
- 1 tablespoon of starch,
- 1 teaspoon of baking powder,
- 3 – 3 1/2 cups of all purpose flour.
For the filling;
- 3 carrots,
- A half teacup of water ( 55 ml.),
- 2 tablespoons of granulated sugar,
- 1 coffee spoon of cinnamon powder,
- 2 tablespoons of crushed walnut or hazelnut,
- 1 grated orange peel.
The cup size is: 200 ml.
Process of Carrot Cookies Recipe
To prepare the filling, wash the carrots and peel and then grate them. Put the grated carrots in a pot and add the water and cook until it gets tender.
After it absorbs the juice and gets tender enough, turn off the stove and add the sugar, grated orange peel, cinnamon powder and crushed hazelnut and mix. Cook the filling for a few minutes and leave it to cool.
To prepare the dough, combine all the ingredients except for the baking powder and the flour in a deep bowl. Add the baking powder and add the flour slowly and knead well. Get a soft but not sticky dough.
Roll out the cookie dough on a plain surface between the two plastic wrap sheets. Then cut ground shapes by using a cup or a cookie cutter. Make lines on the ground cookie dough by using a knife, do not cut the edges.
Place the filling in the center of the dough. Enclose the filling and press the edges together firmly.
Place the shaped dough on a baking sheet in a tray. Place the edges underneath the dough.
Bake them in the preheated oven at 170°C. Do not let them get golden.
After baking, leave the carrot cookies to cool in the tray.
Place them on a serving plate and sprinkle some powdered sugar on them and serve.
