Carrot Pilaf Recipe
This traditional carrot pilaf is great with grilled chicken, fish or lamb. Use this as a side dish to a meal. It is a bit different than ordinary vegetables. This can also be a vegetarian meal.

Ingredients;
- 1 cup of rice (the cup size is 200 ml.),
- 1 middle size carrot,
- 1.5 cups of hot water (300 ml.) (or stock),
- 1 tablespoon of butter
- 1 tablespoon of vegetable oil,
- Parsley, finely chopped,
- Salt.

To prepare the carrot pilaf, at first, rinse the rice and place them into water. Add some salt into the water. Leave the rice to soak for at least 1 hour.
Peel the carrot and grate it into a pan. Add the butter and the vegetable oil into the pan. Cook it by stirring over medium heat for 5 minutes.

Rinse the rice and add them into the pan. Cook it by stirring until the grains of rice are separate.

Add the hot water or stock, add the salt and bring to a boil.

When it boils, reduce the heat, cover and cook it until all the liquid has been absorbed. When it is okay, uncover the rice and add the chopped parsley and gently mix.

Take the pilaf from the heat and cover it with a towel or a paper towel. Leave it for 15 minutes to rest and serve it hot.
