Cheese Borek (Mussel-shaped) Recipe
An easy and delicious Cheese Borek, Turkish savory pastry with cottage cheese and parsley filling. You can serve these delicious treats as a starter or you can enjoy them for lunch with salad.
- 1 teacup vegetable oil (110 ml.),
- 1 teacup yogurt,
- 1 teacup milk,
- 1 egg,
- 1 packet baking powder (10 gr),
- 1 coffee spoon salt,
- 1 coffee spoon vinegar,
- 4 cups all-purpose flour (the cup size is 200 ml.).
For the dough;
- Corn starch.
To brush on;
- 75 grams of melted butter,
- 1 egg yolk.
- 150 grams cottage cheese,

To prepare the dough, mix the milk, yogurt, vegetable oil, egg, vinegar and salt in a deep bowl.
Add the baking powder and the flour gradually. Get a soft but not sticky dough.
Cover the dough with a clean towel until you prepare the filling. (approximately 15 minutes)
For its filling, mix the chopped parsley and the cottage cheese in a bowl.
Roll the dough on a flat surface and divide it into 15 pieces.
Roll out each pieces in the size of a dessert plate.
Put one on the top of the other by putting starch between each pieces.
Don’t put starch on the last piece to roll it easily.
Roll out all of the pieces at one time as big as you can roll.
Then roll the phyllo pastry and slice by 2 cm.
Turn the sliced piece and press with your hand and roll it out with the help of the rolling pin. Make it bigger.
Put the filling in the middle of it. And fold over the filling in a half moon shape. Press on the edges.
Put them into the greased tray. Mix the melted but warm butter and the egg yolk in a bowl.
Brush the mixture on the pastries.
Preheat the oven to 180°C. Bake them until they get golden brown.
It is a layered and crispy pastry. Making the pastries is easier than telling how you make.
You can prepare the filling potato or whatever you want.
With these ingredients, you can get 25 pastries.
