Ingredients;

For the sponge cake;

  • 1 teacup of granulated sugar (the teacup is: 110 ml.),
  • 1 teaspoon of baking powder,
  • 3 eggs,
  • 1 grated lemon peel (1 coffee spoon),
  • 1 cup of all purpose flour (the cup is: 200 ml.).

For the cherry gel;

  • 1 cup of cherry jam,
  • 200 ml. water (1 cup),
  • 1 tablespoon of starch (a full spoon).

For the custard;

  • 3 cups of milk,
  • 2 tablespoons of all purpose flour,
  • 1 tablespoon of starch (a full spoon),
  • 2 tablespoons of grated coconut,
  • 3 tablespoons of granulated sugar,
  • 1 egg,
  • 1 packet of vanilla (5 grams),
  • 50 grams butter.

Process of Cherry Jam Cake with Custard Recipe

Firstly, place a baking sheet in a springform pan (26 cm).
Then to prepare the cake batter, mix the eggs and the sugar in a deep bowl until it gets white.
Add the grated lemon peel and mix.
Add the baking powder and the flour by sifting and mix well.
Pour the batter in the springform pan.
Bake it in the oven at 180°C until the top of the cake gets slightly golden.
Do not preheat the oven.
After baking, remove the cake out from the oven and leave it to cool.

To prepare the custard, combine the milk, flour, starch, sugar, grated coconut and the egg in a deep pot.
Mix them by using a wire beater.
Then cook it by stirring until it gets thick.
When it gets thick enough, remove it from the stove and add the butter and the vanilla and mix them for 1 or 2 minutes by using a mixer.
Pour the custard on the cake and spread.

To prepare the cherry gel, combine the water, cherry jam and the starch in a deep pot.
Boil it and cook it by stirring until it gets thick.
When it gets thick enough, pour the gel on the custard.
Then leave the cake to cool at the room temperature.
And then leave it to cool in the refrigerator for 4 or 5 hours.

When the cherry jam cake gets cool enough, slices and serve it.

If you leave the cake in the refrigerator for one night, it will be more delicious.
You can use strawberry or blackberry instead of cherry.
