Chicken and Orzo Salad Recipe
This creamy chicken and orzo salad is hearty and satisfying and delicious with mixed vegetables, red pepper, dill and garlic yogurt sauce.
- 1 cup of orzo,
- 4 cups of water,
- 2 -3 roasted red peppers (canned also can be used),
- 250 grams canned mixed vegetables (boiled peas, carrots and potatoes),
- 2 chicken breasts,
- A pinch of dill,
- 1 bowl of yogurt,
- 1 grated clove of garlic (if you desire),
Process of Chicken and Orzo Salad Recipe
Wash the chicken breast well, cut into 2 pieces and put them in a pot. Add the salt and the water and leave it to boil. Cover the pot and simmer until the chicken is no longer pink then drain. After it gets cool, make the chicken breast smaller pieces.
Boil the orzo in salty hot water according to package directions or until they get tender. Rinse with cold water, drain, and set aside.
Wash and drain the mixed vegetables.
Combine the orzo, chopped roasted pepper, mixed vegetables and finely chopped dill in a deep bowl. Add the chicken breast pieces and if needed add salt and mix them well. Finally add the yogurt and if you desire add the grated clove of garlic and toss to coat. Serve.
