For the cake;

  • 4 eggs,
  • 1 cup and also 2 tablespoons of granulated sugar,
  • 1 cup of milk (200 ml.),
  • 200 ml. vegetable oil (1 cup),
  • 1 cup of walnuts (crushed but not very small pieces),
  • 1 packet of baking powder (10 grams),
  • 2-3 medium size carrots,
  • 1 packet of vanilla (5 grams),
  • 1 coffee spoon of cinnamon,
  • 3 cups of all purpose flour (the cup is 200 ml.).

To make the cake wet;

  • 1 cup of milk (200 ml.).

For the cream;

  • 1 liter milk,
  • 5 tablespoons of granulated sugar,
  • 1 egg,
  • 3 tablespoons of all purpose flour,
  • 1 packet of vanilla (5 grams),
  • 1 tablespoon of butter or margarine.

Process of Creamy Carrot Cake Recipe

Firstly, mix the eggs and the sugar in a deep bowl until it gets foamy.
Add the milk, vegetable oil, vanilla and cinnamon and continue to mix.
Then add the baking powder and add the flour slowly.
Put the grated carrots and walnut pieces into the mixture.
Mix and then pour the mixture into the greased rectangular pyrex and spread the mixture.
Bake the cake into the preheated oven to 175°C until it gets golden brown.
After controlling the cake with the help of a toothpick, take it out and after 1 minute pour the milk to make the cake wet with the help of a tablespoon.

To prepare the delicious cream, put the milk, granulated sugar, egg and flour in to a saucepan and mix all of them with the help of a wire beater.
Cook the mixture by stirring constantly until mixture is thick enough.
At the end add the vanilla and the butter and stir. Then turn off the stove.
Pour the cream on the cake and spread it by using a spatula.

Leave the cake to cool at the room temperature and then leave it to cool into the fridge for 3 or 4 hours.
When you serve the creamy carrot cake, sprinkle some cinnamon on it.
