Creamy Chicken Pasta Soup Recipe
Delicious and perfect for the cold days. This is the healthiest creamy chicken pasta soup recipe with vegetables, yogurt sauce and spices.
- 200 grams boneless, skinless chicken breast,
- 1 carrot,
- 1 onion,
- 2 cloves of garlic,
- 1 cup of corkscrew pasta (or favorite shaped little pasta),
- 1 bay leaf (if you desire).
For the creamy sauce;
- 3 tablespoons of yogurt,
- 2 tablespoons of all purpose flour.
For the top;
- 2 tablespoons of butter,
- 1 coffee spoons of dried mint,
- A half coffee spoon of red pepper flakes.
Process of Creamy Chicken Pasta Soup Recipe
At first, wash the chicken breast well and put it in a pot and add the onion, carrot and garlic. Add 1.5 liter water and salt and cook them until the vegetables get tender. When it starts to boil add the bay leaf if you desire.
Then drain and cut the chicken breast and the vegetables in small pieces except for the onion. And add the vegetables and the chicken breast pieces in the water you boiled them in.
Mix the flour and the yogurt for the sauce. Add a ladle of the chicken broth from the pot and mix them and make the sauce warm. Then add the sauce in the soup while stirring. And leave it to boil and stir occasionally.
When it starts to boil, add the pasta and cook until the pasta gets tender. If needed, add some more hot water.
In a small pan, heat the butter and add the dried mint and the red pepper flakes and pour the sauce in the soup or add the sauce in the bowls while serving.
If you want, you can use vermicelli instead of pasta.
