Creamy Parsley Soup Recipe
I love this delicious creamy parsley soup enriched with a yogurt cream. We have lots of quick and easy soup recipes but it’s the one I like to make for a winter days.
- 1 onion, finely chopped,
- 3 tablespoons of vegetable oil,
- A half bunch of parsley, finely chopped,
- 3 or 4 cups of water (or chicken broth),
- Ground black pepper,
For the creamy sauce;
- 200 ml. yogurt, (we used homemade yogurt),
- 1 egg,
- 1 tablespoon of all purpose flour.
Process of Creamy Parsley Soup Recipe
For the creamy parsley soup, at first, heat the vegetable oil in a pot over a medium heat and stir in the chopped onions. Cook by stirring until they are really soft. Then add the 3 cups of water and leave it to boil.
To prepare the creamy sauce, mix the homemade yogurt, egg and the flour in a bowl by using a wire beater. Add 3 or 4 tablespoons of the boiling water in the sauce and mix.
Then add the warm sauce in the boiling water and cook by stirring constantly. When it boils, add the finely chopped parsley. Season to taste with ground black pepper and a little salt. Simmer it for more 5 minutes and remove it from the stove.
Then serve the creamy parsley soup hot.
