Process of Creamy Sour Meatball Soup Recipe
Firstly, to prepare the meatballs, put the ingredients in a deep bowl and knead well.
Take small pieces from the mixture and roll them in your palm and place them in a lightly floured tray.
Shake the tray in a way to coat the meatballs with flour. That will prevent them from sticking to each other and falling apart.
Peel the potato and the carrot and wash them well then dice them.
Put 3 tablespoons of vegetable oil in a pot and add the diced carrot and potato pieces and cook by stirring.
Pour 6 cups of water and leave it to boil.
After it starts to boil, add the small meatballs and continue to cook for more 5 minutes.
Then continue to cook over low heat until the vegetables and the rice in the meatballs get tender enough.
To prepare the creamy sauce, put the yogurt, egg yolk, flour and the lemon juice in a deep bowl and mix them by using a wire beater.
Take 4 or 5 tablespoons of boiling water from the pot and add it in the sauce and mix them to make the sauce warm.
Then pour the sauce in the pot slowly and cook by stirring constantly.
If needed, add water.
Boil the soup for 4 or 5 minutes more and remove it from the stove.
Heat the butter in a pan. Once it sizzles, add mint flakes and stir for 20-30 seconds (don’t let it burn). Then, pour it into soup.
Serve the soup hot.
This creamy sour meatball soup recipe is for 5 or 6 people.
