Creamy Yogurt Soup with Green Lentil and Noodle Recipe
This is a popular comfort dish that is a smooth soup made with a yogurt sauce and some boiled green lentil. Try this delicious creamy yogurt soup tempered with the freshness of mint.
- 1 cup of green lentils,
- 1 tablespoon of vegetable oil.
- 8 – 10 cups water (the cup is 200 ml.),
- 1 cup of noodle.
For the creamy sauce;
- 5 tablespoons of yogurt (full spoons),
- 1 egg yolk,
- 1 tablespoon of all purpose flour.
To decorate and make the soup more flavorful;
- 1 tablespoon of vegetable oil,
- 1 coffee spoon of dried mint flakes.
Process of Creamy Yogurt Soup with Green Lentil and Noodle Recipe
To prepare the creamy yogurt soup, firstly, put the green lentils in a pot and pour 3 or 4 cups of water and leave it to boil.
Boil it until the green lentils get tender and then drain the water.
Put the vegetable oil and 8 cups of water in a deep pot and leave it to boil.
When it starts to boil, add the noodles and cook until they get tender.
After the noodles get tender add the tender green lentils.
If it gets thick, add some water.
To prepare the creamy sauce, beat the yogurt, flour and egg by using a wire beater in a deep bowl until smooth.
Take 1 or 2 ladles of the boiling water from the pot and add it in the sauce and stir constantly (by doing this, you will make the sauce warm and ready to poured in to the soup).
Pour the creamy warm sauce in the soup slowly and stir constantly.
To decorate and make the soup more delicious, heat the oil in a small pan.
Add dried mint and pour it on the whole soup in the pot.
Add salt as a final step and stir.
Serve the soup hot.
