Crepe Kebab Recipe

For the crepe;

  • 2 eggs,
  • 2 and a half more teacups of water (the tea cup is 110 ml.),
  • 1 cup of milk,
  • 2 cups of all purpose flour (the cup is 200 ml.),
  • 1 teaspoon salt.

For the filling;

  • 400 grams beef (cut in smaller than bite size),
  • 1 onion,
  • 1-2 green peppers,
  • 1 tomato,
  • A half cup of peas,
  • 3 tablespoons of vegetable oil,
  • Black pepper,
  • Red pepper,
  • Salt.

For the bechamel sauce;

  • 1 tablespoon of butter,
  • 1 tablespoon of all purpose flour,
  • 1,5 cups of milk,
  • Black pepper,
  • Salt.

For the top;

  • Grated cottage cheese.

Process of Crepe Kebab Recipe

Firstly, prepare the crepes.
Mix the eggs, water and milk in a deep bowl by using wire beater.
Add the flour and salt and continue to mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe.
Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
Then take it on a serving plate.

Put the cut in smaller than bite size beef in a non sticky pan and at high heat cook by stirring (seal the beef).
Cook the beef pieces until they give out their juice and absorb back.
Then add the vegetable oil, finely chopped onion, peppers, tomato and cook until it absorbs the juice.
Just before it absorbs the juice, add the rinsed and drained peas.
Then add the salt and spices and stir.
Cook for more 2 minutes and turn off the stove.

Place one of the crepe into a small bowl, put 2-3 tablespoons meaty mixture in it.
Cover the crepe and turn over.
Do the same for the other crepes and the mixture left.
Then place them into greased rectangular pyrex.

Melt butter in a medium saucepan over medium-high heat.
Add flour. Cook, stirring, for 1 to 2 minutes or until bubbling.
Slowly add milk, whisking constantly, until mixture is smooth.
Cook for 10 to 12 minutes or until sauce comes to the boil, thickens.
Remove from heat.

Pour 2 tablespoons of bechamel sauce on each crepe kebab and spread.
Then sprinkle some grated cottage cheese on them.

Bake them in the preheated oven at 180°C until they get golden brown.
After baking, serve hot.
