Easy Creamy Potato Salad Recipe
Easy creamy potato salad with yogurt is a healthier version of this classic side dish. Turkish homemade yogurt adds extra protein and the luscious texture you crave!
- 1 kilos of potatoes,
- 2-3 carrots,
- Half a bunch of dill,
- 2-3 green onions,
- Half a bunch of parsley,
- 1 tablespoon of butter,
- 2 tablespoons of lemon juice,
- Black pepper,
- 4-5 tablespoons of vegetable oil/olive oil.
For its above;
- 1 clove of garlic,
- Red pepper powder,
Process of Easy Creamy Potato Salad Recipe
Place potatoes in a large saucepan and add water to cover by 2 cm.
Bring to boil over medium-high heat. Add 1-tablespoon salt, reduce heat to medium, and simmer.
Stir a few times, until potatoes re-fork tender, about 8 minutes. Peel potatoes and transfer to a large bowl.
Mash the potatoes with a fork. Add the butter and mash them until the butter melted.
Peel and grate the carrots in a saucepan and saute them.
Finely chop the green onions, dill and parsley and add them on the mashed potatoes.
Add the lemon juice, spices, vegetable oil and sauted carrots and stir well.
Cover your tart pan with plastic wrap and pour the mixture in and spread.
Cover the pan with plastic wrap and place it into the fridge for 3 – 4 hours.
After it gets cool completely, invert it and remove the salad from the pan.
Mix the yogurt and mayonnaise in a bowl and add the grated garlic and mix again.
Pour the mixture onto the potato salad and spread.
You can decorate your potato salad with red pepper powder, mint and corns and then slice and serve.
