Easy Turkish Pogaca with Feta Cheese Recipe

Turkish Pogaca are savory stuffed little pastry dumplings full of feta cheese that are baked with a shiny egg yolk finish. There are plenty of pogaca recipes, but only a few are so good. Here is the one of them. A quick and easy recipe for pogaca. You can make it by hand or in a food processor.

Ingredients;

  • 2 1/2 cups of all-purpose flour (the cup size 200 ml.),
  • 1 egg,
  • A half coffee spoon of salt,
  • 1 tablespoon of granulated sugar,
  • 1 full coffee spoon of instant yeast,
  • 150 gr. butter (softened at room temperature),
  • A half teaspoon of water.

For the filling;

  • A half cup of white grated feta cheese (You can also choose cottage cheese or kashar cheese).

For the top of pastry;

  • 1 egg yolk,
  • A pinch of sugar.

Process of Easy Turkish Pogaca with Feta Cheese Recipe

Prepare the Turkish Pogaca dough. Combine all the ingredients in a deep bowl and work them together with your hands. Keep kneading the mixture until you have a smooth, firm dough about as firm as an earlobe. Cover the dough and leave it for an hour in a warm place.

Once the dough has risen, knead the dough for 2 or 3 more minutes. Then punch down and divide into 12 equal pieces, each about a size of a small tangerine. Roll each piece into a ball, and then flatten into a round flat circle with your fingertips.

Place a spoonful of the filling mixture at one side of the circle dough, leaving a little unfilled dough margin near the edges. Fold the circle to cover the filling to form a half moon shape. Make sure the dough covers the filling and meet the other end. Seal the two ends of the dough, pressing with your fingertips well.

Place the stuffed dough on the greased tray and repeat this procedure with the rest of the dough pieces. Leave the pastries in to the tray for 30 minutes before baking. Let them rise. At the end of the time, beat the egg yolk and the sugar then brush it on the pastries.

Bake them into the preheated oven to 180°C until they are golden brown at top. Serve warm.
