Flaky Pastry for the Freezer Recipe

If you’re busy and have no time to prepare flaky pastry, you should save time in the kitchen and freezing homemade pastry is a great way to do this. When you have unexpected guests, or in the mornings instead of bread, you can serve these flaky pastries.

Ingredients;

For the pastry dough;

  • 1 liter warm milk (5 cups),
  • 1 cup of warm water (200 ml.),
  • 250 grams butter or margarine (melted),
  • 1 cup of vegetable oil (200 ml.),
  • 2 coffee spoons of salt,
  • 1 packet of instant yeast (10 grams),
  • 16-17 cups of all purpose flour (the cup is 200 ml.).

For the filling;

  • 2 and a half more cups of all purpose flour,
  • 1 cup of vegetable oil (200 ml.),
  • 1 coffee spoon of salt (not fully).

To brush;

  • 200 grams butter or margarine (melted).

For the top;

  • 3 egg yolks,
  • 4 tablespoons of vegetable oil,
  • Sesame seeds,
  • Black cumin seeds.

Process of Flaky Pastry for the Freezer Recipe

At first, except for the yeast and the flour, put all the other ingredients in to a deep bowl and mix them by using your hands. Then add the yeast and add the flour slowly and knead the dough. Get a soft but not sticky dough.

After adding the 15th cup of flour, add the other cups slowly and control the dough if needed add the left flour. Then cover the dough and leave it to rise for an hour.

To prepare the filling, combine the vegetable oil, flour and the salt in a pan and cook by stirring constantly then leave it to cool.

To brush, melt 250 grams butter or margarine in a small pan.

After an hour, knead the risen dough again and take mandarin size pieces (lumps) and roll them in your palm (get 24 lumps). Then roll the lumps on a plain and slightly floured surface by using a rolling pin. Brush some melted butter or margarine on the rolled dough sheet and spread the filling on it. Then wrap the sheet and make a spiral shape.

Put the other tip of the spiral shaped dough under it. And press lightly on the dough by using your hand. Roll the dough by using a rolling pin slightly (don’t make the dough thin) and place it on a baking sheet into a tray.

Mix the eggs and the vegetable oil in a bowl. Brush the mixture on the rolled dough and sprinkle some sesame seeds and black cumin seeds. Then bake them in to the preheated oven to 180°C until they get golden.

This flaky pastry recipe is for 24 pastries.

After they get cool enough at the room temperature, put them into freezer bags and place them in the freezer. When you need, take them out from the freezer and heat.

When you have unexpected guests, or in the mornings instead of bread, you can serve these flaky pastries.
