Fluffy Pastry with Milk (Pogaca) Recipe
Fluffy pastry with milk – “Pogaca” is from traditional Turkish cuisine. These pastries go perfectly with breakfast or you can serve them to your guests. It is always a great pleasure to see the very delighted face of people when they have the first bite. It is also a wonderful feeling to be sure that they will ask for the second or the third.
For the dough;
- 1 and a half more cups of warm milk,
- A half cup of vegetable oil,
- 50 grams butter (melted),
- 2 eggs (one of the eggs’ egg yolk is for the top),
- 3 tablespoons of granulated sugar,
- 1 tablespoon of salt,
- 1 packet of instant yeast (10 grams),
- 5 and a half more cups of all purpose flour (the cup is 200 ml.).
For the top;
- 1 egg yolk,
- Black cumin seeds,
- Sunflower seeds.
Process of Fluffy Pastry with Milk (Pogaca) Recipe
To prepare the dough, except for the flour, combine all the ingredients in a deep bowl.
Then add the flour slowly and get a soft but not a sticky dough. Cover the dough and leave it to rise.
After it rises, make 25 lumps of the dough and place these dough lumps on a baking sheet into a tray leaving spaces between each dough lumps.
Brush the egg yolk on the dough lumps and sprinkle some sesame, black cumin seeds and sunflower seeds.
Then leave them to rise into the tray before baking for 30 minutes.
Bake them into the preheated oven to 175°C until they get golden brown.
After baking, you can serve your “pogaca” hot or warm.
If you want, you can use any filling for the fluffy pastry such as feta, olive, potato etc.
