Fluffy Pogaca with Feta Cheese Recipe
These fluffy pogaca with feta cheese are both flaky and fluffy. For a big weekend family breakfast, they are good choice.
For the dough;
- 1 teacup of warm milk,
- 1 coffee spoon granulated sugar,
- 2 egg yolks (egg whites are for the filling),
- 1 packet of instant yeast (10 grams),
- 1 teacup of vegetable oil,
- 1,5 coffee spoon of salt,
- 1 teacup of water (the teacup is 110 ml.).
- 1 teacup of yogurt,
- 4,5 – 5 cups of all purpose flour ( the cup is 200 ml.).
To brush the dough rolls;
- 250 grams butter or margarine (first melt and then let it to get solid again and drain the juice left).
For the filling;
- 150 grams feta or curd cheese,
- 3 egg whites.
For the top;
- 1 egg yolk (egg white is for the filling).
Process of Fluffy Pogaca with Feta Cheese Recipe
Firstly, to prepare the dough, combine the warm milk, sugar and yeast in a deep bowl and leave it for 5 minutes.
Then add all the ingredients except for the flour and mix them.
Add the flour slowly cup by cup and knead get a soft but not a sticky dough.
Divide the dough in 6 pieces and place them in to a floured tray.
Cover them with plastic wrap and leave them for 10 minutes.
Melt the butter or margarine and let it get solid again and drain the juice left (the juice will be brushed on the pastries before baking).
For the filling, mix the egg whites and the feta.
Roll out one of the dough pieces on a plain lightly floured surface by using a rolling pin as big as a serving plate.
Then sprinkle a little amount of flour and roll out it by using a thin rolling pin as big as a phyllo sheet.
Pour almost 3 tablespoons of melted butter and brush (heat the butter to brush but not boil).
Continue with the other dough pieces and brush the soft butter on them also and put on top of each other (do not brush the soft butter on the upper one)
Roll the 6 tiered dough out with the help of the rolling pin and brush the butter on.
Then wrap the 2 edges of the dough 1 or 2 cm to center and by starting with the other edge roll the dough.
And slice the roll in 2 cm thickness.
Press lightly on the sliced pieces and roll out by using your hands or rolling pin.
Make oval shaped dough.
Place little amount of filling in the center of the dough and put the long edges of the dough on top of each other.
Tug lightly the tips of the dough and wrap the tips underneath the dough.
Place the shaped pastries on a baking sheet into a tray.
Brush the juice on the pastries and leave them to rise for 20 or 25 minutes.
Then brush the egg yolk on them and bake them in the preheated oven at 180°C until they get golden brown.
After baking, leave them to cool at the room temperature and serve them.
