Green Lentil Soup Recipe
Many nutritionists consider lentils one of the healthiest things you can eat especially the green lentils. So here is the best green lentil soup recipe incredibly easy to make and also incredibly delicious.
- 1 cup green lentil,
- 1-2 onions,
- 1 teacup of orzo (the teacup is 110 ml.),
- 1 tablespoon of tomato paste,
- 2-3 tablespoons of vegetable oil,
- 1 small size carrot,
- 1 coffee spoon of dried mint,
- 7-8 cups of water (the cup is 200 ml.).
Process of Green Lentil Soup Recipe
Firstly, rinse the green lentils and drain.
Put them in a pot and pour 5 cups of water and leave it to boil.
Boil the green lentils until they get tender enough.
Then drain the water and complete the water to 7 cups of water.
Put the chopped onions in a pot, add the vegetable oil and cook them by stirring.
Add the paste and continue to stir.
Add the thinly chopped carrot and mint and stir.
At the end pour the 7 cups water and leave it to boil.
When it starts to boil, make the heat lower and cook it until the carrot pieces get tender for almost 5 minutes.
Add the orzo and continue to cook until the orzo get tender (you can use noodles instead of orzo).
When the orzo get tender enough, add the boiled green lentils.
Then add the salt and mix.
If needed, add a cup of hot water and boil it for 1 or 2 minutes and then serve hot.
