This delicious and easy to make Turkish crunchy pancakes with butter, flaky Katmer, hails from Sivas. You can serve Katmer as part of breakfast or as a tea time treat.

Ingredients;

For the dough;

  • 1 cup of warm milk,
  • 1 cup of warm water,
  • 110 ml. vegetable oil (1 teacup),
  • 1 tablespoon of dry yeast,
  • 1 coffee spoon of salt,
  • 5 cups of all purpose flour (the cup is 200 ml.).

To brush;

  • 200 grams butter,
  • 1 teacup of vegetable oil (110 ml.).

For the top;

  • 1 egg yolk,
  • 1 coffee spoon of yogurt.

Process of Katmer – Crunchy Pancakes Recipe

Firstly, to prepare the katmer – crunchy pancakes dough, combine the warm milk, warm water, a tablespoon of dry yeast in a deep bowl and make the yeast dissolves in the liquid.
Add the vegetable oil, salt and add the flour slowly cup by cup and knead.
Get a soft but not sticky dough.
Cover the dough and leave it to rise.

Melt the butter in a pan (do not boil it).
Add the vegetable oil in the melted butter and leave it to cool.

Divide the dough in 4 pieces and roll them in your palm.
Roll out the first piece on a lightly floured plain surface (get a thick phyllo dough).
Brush the butter and vegetable oil mixture on it.
Roll out the second dough pieces as you do for the first one.
And also brush the mixture on it.
And fold the phyllo dough, overlap the two edges of the dough and then overlap the other two edges.
While folding the phyllo dough like a square, brush the mixture every layer.

Place the square dough in the center of the other phyllo dough.
Then fold the phyllo dough, overlap the two edges of the dough and then overlap the other two edges.
And leave it while you are doing the same for the other two dough pieces.

After preparing the two square, roll out the first one by making the top and the bottom lightly floured and by using a rolling pin in 1 cm thickness as a rectangular.
Then place it on a baking sheet into a tray and roll out the other square dough and also place it on a baking sheet into a tray.
Make diagonal lines on them by using a knife.
Mix the yogurt and the egg yolk then brush it on them.

Finally bake them in the preheated oven at 180°C until they get golden brown.
After they get warm, you can serve.
