These feta cheese pastries are both delicious and also look different because of their shape.

Ingredients;

For the dough;

  • 1,5 cups of warm milk,
  • A half cup of warm water,
  • 250 grams butter or margarine(melted),
  • 2 eggs (one of the egg yolk is for the top),
  • 1 coffee spoon of salt,
  • 2 tablespoons of granulated sugar,
  • 1 packet of instant yeast(10 grams),
  • 6,5 – 7 cups of all purpose flour (the cup is 200 ml.).

For the filling;

  • Vegetable oil,
  • Feta.

For the top;

  • Egg yolk,
  • Poppy seeds.

Process of Leaf Shaped Feta Cheese Pastries Recipe

Firstly, to prepare the feta cheese pastries dough, combine the warm milk, warm water, sugar and yeast in a deep bowl.
Add the melted butter, egg and salt and mix them by using your hand (melt the butter and pour it in this mixture when it gets cool).
Then add the flour slowly and knead.
Get a soft but not sticky dough.
Cover the dough and leave to rise for 30 minutes.

After 30 minutes, divide the dough in 12 pieces and roll each piece in your palm.
Roll out the pieces on a lightly floured plain surface by using a rolling pin as big as a serving plate.
Put the six rolled dough on top of each other and brush the vegetable oil on the each rolled dough.
Sprinkle feta on the second and the forth layer. Do not brush oil on the upper one.

At the end get two 6 tiered dough.
Then cut the first dough 8 triangle pieces like a pizza.
Then make little lenghtwise cuts in the centre of the triangles by using a knife (the cuts should be only in the centre of the triangles, do not cut the edges).
Fold the tip of the triangle and make the tip pass through the cut by turning it from the bottom to inside and pulling it up.
Then stick the two edges of the triangles and press lightly on the sticked edges and place it on a baking sheet into a tray.
Continue with the other triangles.

Brush the egg yolk on the feta cheese pastries and sprinkle some poppy seeds on them.
Then bake them into the preheated oven at 180°C until they get golden brown.

This feta cheese pastries recipe is for 16 pastries.

If you want, you can use any other filling for the pastries such as poppy seed butter or cream chocolate etc.
