Leeks with Olive Oil Recipe
This leeks with olive oil recipe is very easy to make, delicious and healthy. You can keep it in the fridge up to 3 days and serve it cold or room temperature as a side dish.
- 500 grams leek,
- 2 carrots,
- 4 tablespoons of rice,
- 1 coffee spoon of tomato paste,
- A half lemon juice,
- A half teacup of olive oil,
- 2 coffee spoons of granulated sugar,
- 3 cups of hot water (600 ml.).
Process of Leeks with Olive Oil Recipe
Chop the leeks in 1/3 inch rounds and wash them well and drain. Peel the carrots and slice them in rounds
Put the olive oil and the tomato paste in a pot and cook by stirring. Add the leek slices and the carrot slices and continue to cook by stirring.
Add the 3 cups of hot water, salt, sugar and the lemon juice. Cover the lid and cook over low heat for almost 20 minutes.
When the leeks starts to getting tender, add the rinsed rice. Cook for more 10 minutes and remove it from the stove. Then leave it to cool at the room temperature and then leave it in the refrigerator and then serve.
