Lentil Orzo Soup Recipe
Here is a recipe with my favorite red lentil complements any part of the meal; have it as a starter, or as a main dish with some nice warm bread and big salad. Light, healthy and satisfying. Give this lentil orzo soup recipe a try.
- 3/4 cup of red lentil,
- A half cup of orzo,
- 3 tablespoons of vegetable oil,
- 1 onion,
- A half of red bell pepper,
- 1 tablespoon of tomato paste,
- 1 teaspoon of red pepper flakes,
- 6 – 7 cups of warm water,
- 2 coffee spoons of dried mint.
The cup size is 200 ml.
Process of Lentil Orzo Soup Recipe
Firstly, heat the 3 tablespoons of vegetable oil with the finely chopped onion and red bell pepper in a pot and cook by stirring.
Then add the paste and stir and cook for 2 minutes.
After that add the red pepper flakes and pour the 6 cups of warm water and leave to boil.
When it boils, add the orzo and red lentil.
Add the salt how much you like.
And cook at a low heat until the orzo and red lentil get tender.
If it is necessary, you can pour some more water after it boils (I add 1 more cup).
When it boils, turn off the cooker.
Put some dried mint and stir.
Serve your soup hot.
