Moist Coconut Pound Cake Recipe
Light, soft, and so delicious! Once you’ve tried this recipe, I am sure you will make it time and time again. So here’s the recipe for my Moist Coconut Pound Cake, and enjoy!
For the cake;
- 4 eggs,
- 1 cup of granulated sugar,
- 1 cup of vegetable oil,
- 10 grams baking powder (1 packet),
- 1 cup of desiccated coconut flakes,
- 1 cup of all-purpose flour,
- 5 grams vanilla (1 packet).
For the syrup;
- 2 tablespoons of granulated sugar,
- 1 cup of water,
- 1 cup of cold milk,
For its above;
- Desiccated coconut flakes.
(The cup is: 200 ml.)
Process of Moist Coconut Pound Cake Recipe
For the cake mixture, mix the eggs and granulated sugar in a deep bowl by the mixer.
Add 1 cup of desiccated coconut flakes, 1 cup of vegetable oil, 1 packet vanilla, 1 packet baking powder and 1 cup of all-purpose flour and mix well.
Pour the cake mixture into the greased baking pyrex.
Bake it into the preheated oven to 170°C for 40 minutes.
Please do test if the cake is done by using a skewer and poke it in the middle to see that it comes out clean. Every oven is different and cook times may vary a little.
Leave the cake in the oven for 10 minutes.
For the syrup, place the sugar and water in a saucepan and bring to boil.
Stirring until the sugar dissolves. Simmer for 10 minutes without stirring.
Remove it from the heat and let it get warm.
Pour the warm syrup on the hot cake and leave to cool.
After the cake cool enough, pour the 1 cup of cold milk all over the surface of the cake.
The liquid will be quickly absorbed by the cake.
Then immediately sprinkle the dried coconut flakes all over so it sticks.
