One-pan eggs & peppers (Menemen) Recipe
This Turkish style one-pan eggs & peppers is scrambled eggs with chopped tomatoes and sliced green peppers. It is easy to make and perfect for breakfast or brunch.
- 2 tablespoons of vegetable oil,
- 3 green peppers,
- 3 middle sized tomatoes,
- 2 eggs.
Process of One-pan eggs & peppers (Menemen) Recipe
Firstly, take the cores of the peppers out and chop them.
Put the vegetable oil in a pan and add the chopped green peppers and cook by stirring until their color changes.
Peel the tomatoes and chop them.
Add the chopped tomatoes in the pan and mix by stirring.
Cover the lid and cook over low heat until the tomatoes get tender enough.
Then add the salt and beat the eggs on the tomato and the pepper mixture and stir.
When the eggs is cooked, serve it hot.
If you desire, add black pepper or red pepper flakes.
