- 2-3 eggplants,
- 1 onion,
- 2 tomatoes,

Process of One Pot Eggplant with Olive Oil Recipe
To prepare the one pot eggplant with olive oil, at first, wash and cut stalks of eggplants. Peel them striped and dice the eggplants. And leave them in the salty water for 30 minutes so that the bitterness of eggplants goes away.
Peel the onion and chop them. Take the cores of the peppers out and also chop them.
Heat the vegetable oil in a pot and add the grated cloves of garlic and onion and cook by stirring until they get slightly golden. Add the peppers and add the diced potatoes and continue to cook by stirring. Then add a teacup of water (not fully) and cook until the potatoes get tender.
Drain the eggplants and wash them again well and add them also in the pot and mix by stirring. Peel the tomatoes and dice them and add them in the pot. Add the salt and cover the lid and cook over low heat. When the eggplants and the potatoes get tender enough, remove it from the stove and serve hot.
