For the dough;

  • 2 cups of warm water,
  • 1 tablespoon of instant yeast (not fully),
  • 1 tablespoon of granulated sugar,
  • 4,5 cups of all purpose flour (the cup is: 200 ml.),
  • 1 coffee spoon of salt,
  • 2 tablespoons of vegetable oil.

For the filling;

  • 4 – 5 onions,
  • 1 tablespoon of butter,
  • 4 tablespoons of vegetable oil,
  • 1 tablespoon of paste (mix the tomato paste and the pepper paste),
  • Thyme,
  • Red pepper flakes,
  • Red pepper,
  • Dried mint,
  • Salt.

For the top;

  • Egg yolk,
  • Sesame.

Process of Onion Roll Recipe

Firstly, to prepare the dough, combine the warm water, yeast and the granulated sugar in a deep bowl.
Cover it and leave it for 5 minutes.
Add te salt and add the flour slowly and knead well.
Get a soft and slightly sticky dough.
When you gather the dough, add two tablespoons of vegetable oil and knead.
Cover the dough and leave the dough to rise for 40 or 45 minutes.

To prepare the filling, chop the onions lengthwise and put the vegetable oil and the butter in a pan.
Cook the onions by stirrig until they get tender.
Add the spices, salt and the paste.
Then turn off the stove and leave it to cool.
Take the dough on a slightly floured plain surface and divide in half.
Make the first half larger by using your hands as large as a rectangular tray.
Place the half of the filling on the dough and spread.
Wrap the two short edges and then overlap the long edges and place it on a baking sheet in a tray.
Continue with the second dough piece.
Then leave it to rise for 10 minutes before baking.
Then brush egg yolk on them and sprinkle some sesame.

Bake them in the preheated oven at 180°C until they get golden brown.
After baking, cover them with a clean cloth and leave them for a little time.
Then slice and serve.
