Orzo Salad with Yogurt Recipe
A quick, hearty and delicious orzo salad recipe made with garlic yogurt, carrot and parsley that can be served as a side dish.
- 1 cup of orzo,
- 10 tablespoons of yogurt without juice,
- 2 tablespoons of mayonnaise,
- 1 clove of garlic,
- 1 carrot,
- 3 tablespoons of vegetable oil,
- 1 pinch of parsley.
Process of Orzo Salad with Yogurt Recipe
At first, pour 4 cups of water in a pot and leave it to boil.
Add salt and vegetable oil in the boiling water and then add the orzo.
Leave it to boil until the orzo get tender.
Then drain it and pour cold water on the orzo and drain again.
Peel the carrot and grate it.
Put 2 tablespoons of vegetable oil in a pan and cook the grated carrot for 5 minutes by stirring then leave it to cool.
Mix the yogurt, mayonnaise and grated clove of garlic and salt in a bowl until smooth.
Add the orzo, grated carrot and finely chopped parsley and mix.
Then place the orzo salad with yogurt in a serving plate and serve.
You will want to make this salad often which is very easy and delicious.
