Orzo Soup with Yogurt Recipe
The following season is Autumn and then winter. This means it’s time for more soups! Soups are quite relieving especially when it is raining or snowing outside. If you are in soup mood, then here is an another orzo soup recipe!
This one has a special and yummy yogurt sauce. This sauce makes the soup creamy and more healthier. Here is the our delicious orzo soup with yogurt recipe.
- A half cup orzo,
- 6 – 6,5 cups of water (or chicken consomme),
For the creamy sauce;
- 1,5 cups of yogurt (the cup is 200 ml.),
- 1 tablespoon of all purpose flour,
- 1 egg.
To decorate and make the soup more delicious;
- 1 tablespoon butter,
Process of Orzo Soup with Yogurt Recipe
Firstly, to make the orzo soup with yogurt, pour the water or chicken consomme in a pot and leave it to boil.
Add the orzo when the water starts to boil.
Cook the orzo until they get tender.
While the orzo are getting tender,prepare the creamy sauce.
Mix the yogurt, egg and flour in a bowl by using wire beater.
Take 3 or 4 tablespoons of water from the boiling water in the pot and add in to the sauce.
Mix the sauce and the hot water and it makes the sauce warm.
While stirring the soup constantly, add the creamy sauce slowly.
Then continue to stir until the soup boils.
When the soup starts to boil, make the heat low and continue to cook for 1 minute and add the salt.
Then turn off the stove.
Melt the butter in a small pan and add the mint and cook by stirring but not make the mint brown.
While serving the soup,pour some of the butter and mint mixture on it.
This orzo soup with yogurt recipe is for 5 or 6 people.
If the orzo soup gets so thick, you can add some hot water.
