Process of Potato Stuffed Pastries Recipe
Prepare the filling. Peel the potatoes and cut in big size and boil them in salty water until they get tender. Then drain and mash the potatoes by using a fork. Add the chopped green onions and 2 tablespoons of vegetable oil and the spices and mix well.
Prepare the dough. Combine all the ingredients except for the flour and the baking powder in a deep bowl.
Add the baking powder and add the flour slowly and knead well. Get a soft but not sticky dough.
Divide the dough in 4 pieces and roll out the first dough piece (not very thin). Cut the dough by using a jar (get round dough pieces). Then make lines in the center of the dough by using a knife.
Take a small piece from the filling and roll it in your palm and get and oval shaped filling. Place the filling in the center of the dough. Enclose the filling and press the edges together firmly.
Place the shaped pastry in a greased tray and continue with the dough and filling left. Then brush the egg yolk on the pastries and sprinkle some black cumin seeds on them.
Finally bake them in the preheated oven at 180°C until they get golden brown.
