When phyllo sheets come together with a wonderful filling such as in this recipe, a yummy borek comes out. Try and serve it to your guests and also for breakfast to your family. This potato stuffed phyllo pastry is so delicious.

Ingredients;

  • 3 phyllo sheets.

For the sauce;

  • 1 teacup of milk,
  • 1 teacup of yogurt,
  • 1 teacup of vegetable oil,
  • 2 eggs (one egg yolk is for the top).

For the filling;

  • 4 middle size potatoes,
  • 1 onion,
  • 1 tablespoon of paste,
  • Crushed red pepper,
  • Black pepper,
  • Mint,
  • Salt.

For the top;

  • Egg yolk.

Process of Potato Stuffed Phyllo Pastry Recipe

Firstly, to prepare the filling, peel the potatoes and chop them in bite size and boil them until they get tender enough.
When they get tender, drain and mash them by using a fork.
Heat the oil in a pan and add the chopped onion and cook by stirring until they get lightly brown.
Right after adding the paste and cooking by stirring, add the mashed potatoes, salt and spices.
Cook them by stirring for more 1 or 2 minutes and turn off the stove then leave it to cool.

While the filling is getting cool, prepare the sauce.
Mix the ingredients you need in a deep bowl (don’t forget to separate one of the egg yolk for the top).

Lay one of the phyllo sheet on a plain surface and brush the sauce on it.
Sprinkle the potato filling on it.
Lay the second phyllo sheet on the first one.
Brush the sauce on it, too.
Sprinkle the potato filling on it and lay the third phyllo sheet on the second one.
Brush the sauce on the last phyllo sheet and sprinkle also the potato filling.
Then wrap the edges of the phyllo sheets closer to the centre and roll it.
Leave the roll in to the fridge for an hour (If you want, you can cut the roll in half and then put it in the fridge).
After an hour, take it out from the fridge and slice the roll 2 cm thick by using a knife.

Place the slices in a tray and brush egg yolk on them.
Then bake them in the preheated oven at 170°C until they get golden brown.

After baking, take them out from the oven and serve hot.

This potato stuffed phyllo pastry is so delicious.
