At first, wash the quinces and peel them then leave them in a water. Take the cores of the quinces out and leave them in a separate bowl.
Cut the quinces in small pieces (not too small) and at the same time until you finish the cutting, leave them in water. Drain them and then place the quince pieces in a bowl and put them in the pressure cooker (3 bowls).
Add the sugar according to the amount of the quinces (almost 3 bowls).
Add 3 tablespoons of water for each bowl of quinces (almost 9 tablespoons).
And then add the cores of the quinces and add the cinnamon stick and cover the lid. Cook it until it starts to boil.
After it starts to boil, cook over low heat for more 10 minutes. Then turn off the stove. After waiting for a while until the pressure goes out, open the cover of the cooker and remove the cores and cinnamon stick. And then simmer for more 10 minutes.
Add the 4 or 5 drops of lemon juice and mix by stirring. Pour the jam in glass jars and cover the lids. Turn upside down the jars and leave them to cool.
Note: If you add the sugar in quinces and leave them until morning, this makes the quinces hard so by doing the jam according to the recipe will prevent the quinces from getting hard.
