Red Lentil and Rice Soup
Here is a quick soup that’s super easy and yummy too! Red lentil and rice combination is high in protein, hearty and rich in flavor. This red lentil and rice soup will comfort you all winter long.
- 1 cup of red lentil,
- A half cup of rice,
- 1 onion,
- 3 tablespoons of vegetable oil ,
- 1 tablespoon of butter,
- 1 tablespoon of tomato paste,
- Red pepper flakes,
- Powdered cumin (as desired),
- 8 cups of water (the cup size is 200 ml.).
Process of Red Lentil and Rice Soup
Firstly, add the red lentils and rice in a deep pot and pour the water.
Add the salt and leave it to boil over the stove.
When it starts to boil, continue to cook over low heat until the lentils and rice get tender.
In a pan, add the vegetable oil and add the finely chopped onions and cook by stirring until the onions get tender.
Then add the butter and the paste and cook by stirring for more 1 minute.
Finally add the salt and the spices and turn off the stove.
When the rice and lentils get tender enough, add the onion and paste mixture in it.
Continue to cook by stirring for a while and remove it from the stove.
Serve the soup hot.
This red lentil and rice soup recipe is for 5 or 6 people.
If the soup is too thick, add more water.
