Sekerpare; Tender and Moist Turkish Semolina Cookies in Syrup Recipe
This tender and moist Turkish semolina cookies in syrup is called ‘sekerpare‘, which means “a piece of sweetness.” Try some and you’ll see why it’s exactly that.
For the dough;
- 2 eggs (separate one of them’s egg yolk)
- 125 grams of margarine (at room temperature),
- 1 cup of powdered sugar,
- 3 and a half tablespoons of semolina,
- 1 packet of baking powder (10 grams),
- 1 packet of vanilla (5 grams),
- 3 and a half cups of all-purpose flour (the cup size: 200 ml.).
For the syrup;
- 3 cups of granulated sugar,
- 4 cups of water (800 ml.),
- 1 tablespoon of lemon juice.

First prepare the syrup by boiling sugar and water for 3-5 minutes. Then, stir in lemon juice and let it boil for another 5 minutes and then leave aside to cool.
For the cookies dough, put all the ingredients in a deep bowl except for the flour. Mix them and add the flour slowly and knead at the same time. The dough should be soft and non sticky as cookie dough. Take walnut sized pieces from the dough and shape them as oval.
Do the same for the remaining dough and place oval shaped dough with some space between them onto tray. Brush the egg yolk you separated before on all the sekerpare cookies and draw lines on them by using a fork.
Bake them in the oven preheated to 180 °C until their color turn brown. After that, take them from the oven and set aside for 5 minutes.
After 5 minutes, pour the syrup onto each of the cookies with the help of a ladle. (The sekerpares are hot but the syrup is cool)
Then leave the sekerpares to absorb the syrup. After the sekerpares absorb the syrup and get soft, you can serve.
