Spinach Cake with Whipped Cream Frosting Recipe

Ingredients;

For the cake;

  • 3 eggs,
  • 1 teacup of granulated sugar,
  • A half cup of milk (100 ml.),
  • 1 teacup of vegetable oil (the teacup size is 110 ml.),
  • 1 tablespoon of pureed spinach,
  • 10 grams of baking powder (1 packet),
  • 1 packet of vanilla (5 grams),
  • 2 cups of all purpose flour (the cup is: 200 ml.).

For the cream;

  • 3 cups of milk (600 ml.),
  • 2 1/2 tablespoons of all purpose flour,
  • 1 tablespoon of corn starch,
  • 4 tablespoons of granulated sugar,
  • 1 packet of vanilla (5 grams),
  • 1 tablespoon of butter,
  • 75 grams of whipped cream powder (1 packet).

Process of Spinach Cake with Whipped Cream Frosting Recipe

Firstly, to prepare the pureed spinach, wash the spinach well and cook them without adding any water. Then by using a blender, make the spinach pureed.

To prepare the cake mixture, mix the eggs and the sugar in a deep bowl until foamy. Add the milk, vegetable oil and the pureed spinach and mix well. Finally, add the flour, vanilla and the baking powder and mix well.

Grease a spring form pan (24 cm.) with butter and pour the mixture in it.

Bake it in the preheated oven at 175°C for the first 20 minutes, do not open the cover of the oven. Check the cake by using a toothpick and then remove it from the oven.

To prepare the cream, mix the milk, flour, starch, sugar in a pot by using a wire beater until smooth. Then cook it by stirring constantly until it stats to boil and gets thick. Add the vanilla and the butter and mix then remove it from the stove and leave it to warm. When the cream gets warm, add the whipped cream powder and mix for 5 minutes.

After the cake gets cool enough, remove it from the pan and trim off the edges and the top. Use a robot to make this cake pieces smaller to sprinkle on the cake later.

Cut the cake in two layers and place the bottom piece in a serving plate. Pour the half of the cream on the bottom piece. Place the top on the cream and cover the cake with cream left.

Finally sprinkle the small cake pieces on the spinach cake and leave it in the refrigerator for 1 or 2 hours and then serve.
