Turkish Closed Pide with Ground Beef Recipe

It is always an irresistible food! The greatest thing about this Turkish closed pide with ground beef recipe is it’s so easy and anyone can make it. This means that you won’t need to go to a restaurant to eat pides any more!

For the dough;

  • 1 teacup of warm water (the teacup is 110 ml.),
  • 1 teacup of warm milk,
  • 1 teacup of vegetable oil ,
  • 1 packet of instant yeast(10 grams),
  • 1 egg white (the egg yolk is for the top),
  • 1 coffee spoon of granulated sugar,
  • 1 teaspoon of salt,
  • 3 cups of all purpose flour (the cup is 200 ml.).

For the filling;

  • 250 grams ground beef,
  • 1 big size onion,
  • 1 small red bell pepper,
  • 2 tablespoons of vegetable oil,
  • 1 pinch of parsley,
  • Red pepper flakes,
  • Salt.

For the top;

  • 1 egg yolk,
  • 1 tablespoon of vegetable oil.

Process of Turkish Closed Pide with Ground Beef Recipe

Firstly, to prepare the dough, combine the warm milk, warm water, sugar, yeast in a deep bowl.
Add the vegetable oil, egg white and salt and mix them.
Add the flour slowly and knead well.
Get a soft and lightly sticky dough.
Cover the dough with a plastic wrap and then cover it with a clean cloth and leave it to rise.

To prepare the filling, chop the onion and peppers and put them in a pan then add the vegetable oil.
And cook them by stirring.
Add the ground beef and cook until the ground beef absorbs its juice.
After it absorbs the juice, add the chopped parsley, red pepper flakes and salt then mix them well.
Turn off the stove and leave the filling to cool.

Take mandarin size pieces from the dough and roll them in your palm (8 or 9 dough pieces).
Roll out the pieces lengthwise on a plain and lightly floured surface by using a rolling pin.
Place some filling on the dough and join two long edges together , press the two edges firmly to seal.
Put the closed pide on a baking sheet in a tray by placing the edges underneath.
Continue with the other dough pieces.
After all dough pieces are shaped, brush the egg yolk and the vegetable oil mixture on them.
Then leave the closed pides in the tray for 15 minutes before baking.

Finally bake the closed pides in the preheated oven at 190° until they get golden brown.
After taking the closed pides out from the oven ,cover them with a clean cloth (it makes them tender).

Serve the pides hot.
