Turkish Eggplant Kebabs with Mashed Potato Recipe
Eggplant and beef are favorite ingredients in Turkish Cuisine. And also if these ingredients come together with mashed potato, you will love this recipe. Here is the our Turkish Eggplant Kebabs with Mashed Potato Recipe.
- 2 bell eggplants.
- Vegetable oil.
For the beef sauce;
- 400 grams beef (chopped in bite size),
- 3 tablespoons vegetable oil,
- 1 onion,
- 1 red bell pepper,
- 2 medium size tomatoes,
- A half tea cup hot water,
- Red chopped pepper,
To prepare the mashed potato;
- 4 medium size potatoes,
- 1 tea cup milk (110 ml.),
- 1 tablespoon butter,
For the top;
- Grated cottage cheese.
Process of Turkish Eggplant Kebabs with Mashed Potato Recipe
Firstly wash the eggplants and use a vegetable peeler to peel lengthwise strips of skin from the eggplant: it will look striped. Slice eggplants crosswise.
Leave the slices into the mixture of water and salt for 15 minutes.
Peel the potatoes and slice them crosswise. Don’t make the slices thin and boil the slices until they get tender.
When they get enough tender, drain it and while it is hot add the butter then mash the potato slices with the help of a fork.
Add milk and stir the mashed potatoes.
Drain the eggplant slices and make them dry with the help of a paper towel.
Fry both sides of the slices.
Place the slices on the paper towel to get the oil then place them into a pyrex or tray.
And to prepare the filling chop the onion.
Then heat the oil and add the chopped onions and cook.
Add the chopped beef and cook at a high heat for 2 or 3 minutes (saute the beef).
Add the chopped pepper on the sauteed beef and cook for 1 minute.
Peel the tomatoes and chop them and also add the chopped tomatoes on the sauteed beef and stir.
Pour the half teacup of hot water and at a low heat cook it until the beef get enough tender.
After they get tender, turn of the oven and add the salt, spices and stir.
Put the filling on the eggplant slices.
On the filling, place some mashed potatoes and spread it.
At the end place some grated cottage cheese on the mashed potatoes.
Bake them until they get golden brown into the preheated oven to 200°C.
Serve the dish hot.
