Turkish Little Meatball Soup Recipe
This Turkish Little Meatball Soup is perfect for nights you want hearty comfort food fast!
- 1/2 cup rice,
- 1/2 cup fine bulgur,
- 1 cup mixed vegetables (canned, boiled potatoes, peas and carrots),
- 2 liters water (10 cup),
- 1.5 cup yogurt,
- 1.5 tablespoon all-purpose flour.
For the meatballs;
- 150-200 grams ground beef,
- 1 small size onion,
- 1-2 tablespoon breadcrumbs,
- 1 teaspoon red pepper powder,
For its above;
- 1 coffee spoon butter,
- Dried mint.
The cup size is 200 ml.
Process of Turkish Little Meatball Soup Recipe
First rinse the rice and fine bulgur and put them in a deep bowl. Add 2 liters water and leave to boil. After it boils, continue cooking over a low heat until the rice and bulgur get tender.
For the meatballs, put the beef in a deep bowl. Grate the onion and add it into the bowl. Then add the breadcrumbs, salt and red pepper powder. Mix all the ingredients in the bowl by hand. Take small pieces from the mixture. Roll the mixture into small meatballs.
Pour the olive oil into the frying pan. Heat the vegetable oil and cook the meatballs over medium heat and take them on a plate.
Rinse the 1 cup of mixed vegetables and add them on the tender rice and bulgur. Then add the meatballs.
Mix the 1.5 cups yogurt and 1.5 tablespoons all-purpose flour in a bowl. Pour the mixture on the soup and cook for 5 minutes by stirring continuously.
In a pan, melt the butter and put some dried mints in it. Stir it with a spoon and cook for 3 minutes. Add the sauce in to your soup. Then stir the soup and serve it hot.
