Turkish Revani: Semolina Cake Steeped in Syrup Recipe
Turkish Revani is one of the most common desserts in Turkish cuisine that’s served both at home and in restaurants. It is a simple dessert made with a single layer of soft, yellow semolina cake steeped in lots of light syrup.
For the cake;
- 1 cup of granulated sugar,
- 3 eggs,
- 1 cup of milk (200 ml.),
- 1 cup of vegetable oil (200 ml.),
- 5 grams vanilla (1 packet),
- 10 grams baking powder (1 packet).
- 1 1/2 cups of semolina,
- 1 1/2 cup of all-purpose flour,
For the syrup;
- 2 1/2 cups of powdered sugar,
- 3 cups of water (600 ml.),
- Quarter lemon juice.
The cup size is 200 ml.
Process of Semolina Cake Steeped in Syrup Recipe
Prepare the semolina cake mixture. Mix the sugar and the eggs in a deep bowl until pale and creamy. Mix in the oil, milk and vanilla. At the end, add the semolina, baking powder and flour and mix well.
Pour the mixture into the greased rectangle baking pyrex.
Bake it into the oven preheated to 170°C. Control the cake by a clean toothpick and take it out from the oven. Leave the cake until it gets cool enough.
Prepare the syrup. Place the sugar and water in a saucepan and bring to boil. Stirring until the sugar dissolves. Simmer for 10 minutes without stirring. At the end of the time pour the lemon juice. Boil for 5 minutes and remove it from the heat and leave it for 2 or 3 minutes.
Pour the hot syrup on the cool cake. Let the cake absorb the syrup and cool down.
When it gets cool enough and absorbs the whole syrup, cut it in square or diamond shapes and serve. Enjoy!
Note: You can also make orange-flavored revani by substituting the lemon zest and juice with orange zest and juice.
Or, you can eliminate the lemon all together and use rose water instead to give the cake a wonderful rose aroma.
