Spring Soup (Turkish Yogurt Soup) Recipe
This easy, one-pot spring soup recipe (Turkish yogurt soup) come together quickly on busy weeknights, and leftovers can be frozen and thawed out later to enjoy.

Ingredients;
- 1 teacup of rice,
- 1.5 cup of yogurt (300 ml.),
- 1 egg,
- 1 tablespoon of flour,
- Vegetable oil,
- Dried mint,
- Salt,
- Water.

Prepare the spring soup. Rinse the rice and cook them with 2 cups of water in a saucepan. Cook the rices at a low heat until they get tender.
Mix the yogurt, egg and flour in a bowl or jar.
Pour 4 cups of water into your saucepan after the rices get tender. Right after you pour the water, pour the mixture (yogurt, egg, flour). And cook until it boils by stirring continuously.
If it is necessary, you can pour some more water after it boils. When it boils, turn off the cooker.
In a pan, heat the oil and turn off the cooker and put some dried mints in the oil. Stir it with a spoon. Add the sauce in to your soup. Then stir the soup and serve it hot.
