White Chocolate Dipped Lemon Cookies Recipe
For the lemon lovers, these lemon cookies are the perfect treat.

Ingredients;
For the dough;
- 200 grams butter (at the room temperature),
- 1 cup of granulated sugar (not a full cup),
- 1 egg,
- A half cup of starch,
- 1 grated lemon peel,
- 2 tablespoons of lemon juice,
- 1 teaspoon of baking powder,
- 1 packet of vanilla (5 grams),
- 2 1/2 cups of all purpose flour (If needed you can add one more tablespoon of all purpose flour).
For the top;
- 1 packet of white chocolate,
- Pistachio powder.
The cup size is 200 ml.
Process of White Chocolate Dipped Lemon Cookies Recipe
Prepare the cookie dough. Mix the butter and the sugar in a deep bowl until it gets creamy by using a mixer. Add the other ingredients and add the flour slowly and knead well. Get a soft but not sticky dough.
Take walnut sized pieces from the dough and roll them in your palm. Place them on a baking sheet in a tray by leaving some space between each cookies. Make plus shapes on the cookies by using a fork.
Bake them in the preheated oven at 170°C for 15 minutes (they do not get golden, they will stay white). After taking them out from the oven, leave them to cool in the tray.
Place the white chocolate in a heatproof bowl over a pan of simmering water. The base of the bowl should sit above the water without touching it. Allow the chocolate to melt so that it is smooth, shiny and glossy.
After the cookies get cool, dip half of each cooled cookie into melted chocolate and place them again in the tray. Sprinkle pistachio powder on them and after a while you can serve.
This white chocolate dipped lemon cookies recipe is for 30 lemon cookies.
Note: While baking, the plus shapes can disappear, then again make the shape by using a fork after baking.
