Wind Rose Shaped Cheese Buns Recipe (Turkish Pogaca)
You won’t regret trying this cheese buns recipe, it is so delicious, soft and moist with the cheese in it. Make the cheese buns for a nice brunch or dinner. They rewarm nicely.
For the dough;
- 1 egg white,
- 1 cup of warm milk (200 ml.),
- 1/2 cup of olive oil (100 ml.),
- 1 cup of warm water (200 ml.),
- 10 grams of instant (dry) yeast (1 packet),
- 1 1/2 tablespoon of granulated sugar,
- 1 coffee spoon of salt,
- 5 and a half cup of all-purpose flour (the cup size is 200 ml.).
For the filling;
- 1 bowl cottage cheese or white/feta cheese,
To brush on;
- 1 egg yolk,
- Sesame seeds.

Prepare the cheese buns dough. Except for the flour, put all the ingredients for the dough in a deep bowl and mix well. Knead it while adding the flour gradually and stop adding the flour while the dough is sticky. Knead the dough for a while. Cover the dough with a clean cloth. Leave it for an hour for fermentation.
To prepare the filling, stir the cottage cheese and finely chopped parsley in a bowl.
Divide the dough into 18 equal pieces and roll them in the palm of your hand. And then roll out the pieces with the rolling pin.
Put the filling on one of the edges of the dough. Fold slightly the edges to the inside of the dough.
Starting with the above of the dough, roll the dough to the middle. And cut the dough with the help of a knife by leaving 2 cm. gaps between each parts.
Rotate the each part you cut around once to the same direction. Place the rotated parts on the rolled dough. Make a Turkish bagel shaped dough by combining the two sides of the dough.
Apply the same process for the other pastries.
Leave them in the tray for 10 or 15 minutes. Brush the egg yolk on them and then sprinkle sesame seeds. Bake them in a preheated to 180°C oven until they get golden brown.
With these measures, you can get 17 or 18 buns.
