Yeast Pastry with Cheese (in Turkish Dizmana)

Ingredients;

For the dough;

  • 1 cup of warm water (200 ml.),
  • 1 cup of warm milk (200 ml.),
  • Instant yeast (10 grams),
  • 1 coffee spoon of granulated sugar,
  • 1 1/2 coffee spoon of salt,
  • 4 1/2 cups of all-purpose flour,
  • 1 egg white (separate the egg yolk for brushing).

For the filling;

  • 200 grams cottage cheese or feta cheese.
  • A pinch of parsley.

For over the pastry;

  • 1 cup of yogurt,
  • 1 egg yolk,
  • 1/2 teacup of vegetable oil,
  • 3 tablespoons of milk.

The cup size is 200 ml. and the teacup size is 110 ml.

Process of Yeast Pastry with Cheese Recipe

For the yeast pastry with cheese, put all the ingredients into a deep bowl except for the flour and the yeast and mix them. Add the yeast and knead while adding the flour gradually. Stop adding the flour while the dough is sticky.

Clean your hands and knead the dough for 2 or 3 minutes more. Gather up the dough and cover the dough with a clean cloth. Leave it for 1 hour.

For the filling, mix the chopped parsley and the cottage cheese in a bowl.

At the end of the time, divide the dough into 3 lumps. Roll the lumps with the palm of your hands and then roll the lumps out into a rectangle with a rolling pin.

Scatter half of the cheese mixture along the long edge of the dough. And start rolling up it. Then by leaving 2 cm. borders between each part, cut the rolled dough. Place them into a greased tray leaving gaps in between the dough to rise. After you finish rolling and cutting all the lumps, leave them for 15 minutes into a tray to rise.

To brush over the dough, mix all the ingredients you need into a bowl. Then brush the mixture on the dough.

Preheat the oven to 160 – 170°C and bake them until golden on top.

Take the pastry out of the oven and serve it warm.
